How to Make Delicious Thai Red Curry with Rice at Home

New day and a new category on my blog! This is a category that I have been looking forward to for a very long time. My love for cooking has only grown over the past few years and finally the time is here when I share some of my secrets with you too!



For today's recipe, I'm sharing a quick and balanced dinner meal that you can throw together in less than 30 minutes with a minimal amount of ingredients.


Ingredients:

  • Thai Red Curry Sauce (Trader Joe's)

  • Green Peppers

  • Red Peppers

  • Cilantro

  • Chicken (if you prefer protein)

  • Red Chilli flakes

  • White rice

  • Scallions

  • Ginger-garlic paste

  • (Alternate to Trader Joe's Sauce) Look up a recipe for Thai red curry sauce


Recipe:

1. Marinate the chicken (breast/thigh based on your preference) in your desired way. My go-to recipe is to marinate with chicken tikka powder or taco seasoning. This part is optional if you prefer your curry without meat.

2. Julienne your green peppers and red peppers. Chop your cilantro and cut your scallions.

3. In a pan, heat up a little oil and then cook your chicken in this pan for as long as needed.

4. In another pan, heat up a little oil; either add chopped ginger and garlic or one tablespoon of ginger-garlic paste. Sauté that for a minute or two.

5. Add green peppers, red peppers, and a little bit of scallions. Sauté them for five minutes or as long as needed.

6. Pour the Thai Red Curry sauce into the vegetables and set your stove to medium. Let the sauce simmer for five minutes.

7. Cut the chicken into long, thin slices, as shown in the image. Put the chicken in the sauce.

8. Add some cilantro and more scallions. Add some red chili flakes and any additional spices to taste.

9. Five minutes after the sauce has been simmering, take it off the stove and serve it with some fresh white rice.

10. Top the dish with some cilantro and lime.
